Recipe of the Day: Blueberry Buckle

With New Jersey blueberries selling for 99 cents at my local A&P, I've been making Blueberry Buckle, aka coffee cake with blueberries in it. This is one of the easiest things in the world to make, and ever so good.

Preheat oven to 375 fahrenheit

For cake:

Mix together until smooth and creamy:

1/4 cup (1/2 stick) butter, softened
3/4 cup sugar
1 egg

Stir in 1/2 cup milk

Sift together and add:

2 cups sifted1 flour
1/2 teaspoon salt
2 teaspoons baking powder

Stir in 2 cups washed blueberries (usually about one box) that have been picked over to remove unripe berries and stems

Put into a 9x9 greased square pan

Topping:

1/4 cup (1/2 stick) butter
1/4 cup dark brown sugar
1/4 cup white sugar
1/2 teaspoon cinammon
1/3 cup flour

Mash it all together until it's a uniform consistency, and sprinkle over the top of the cake. Bake 45-55 minutes.

You wound me . . . the purpose of this recipe was to share something delicious, not sell cooking products. The purpose of my links isn't to sell stuff either; it's to tell y'all about awesome household gadgets I own. We'll return to our regularly scheduled programming later.

This is obviously the teaser section; I think the advertising revenue comes later in the plan.  It will be for exercise devices, gym memberships and weight-loss programs. ;-)

The intent was not to wound, indeed not, it was more of a jest. With all that's going on in the world right now, Blueberry Buckle somehow seems like something one might find on the Betty Crocker's Best Recipes of 1955 Blog.

Dang there's a swell Blueberry pie recipe there your readers don't want to miss!

That looks like a fairly typical coffee cake recipe, but with blueberries added. IOW it ought to be succulent, unique, and capable of stopping your clock in less than three bites.

I loved it! I had just bought blueberries (for 1 dollar a package) when I read your blog. Thank you for posting this delicious recipe--I am not much of a cook, but this was easy.

My wife made this for me the other day and it was tasty. Better yet was when I heated it up in the micro and added vanilla ice cream later that evening. Perfect combo.
